The Crescentina ( ancient name by now diffusedly supplanted by " tigella " ) is the ancient mountain bread, gotten by a flour water and climbs kneading ( sometimes even the milk, the yeast and the eggs) and cooked in diskettes that years ago were cooked in round forms of refractory earth ( the " true " tigelle ). The Crescentine are seasoned, after they are cut to half, with a lard garlic and rosemary pulp, covered by grated Parmigiano Reggiano (cheese). You can even stuff them with the excellent local meat and use in place of the bread with the " game " and the stews, in particular of mushrooms. You can eat them in a lot of places of the zone.
